Microsoft Lync Server 2010 communications software supports virtualization topologies that support all Lync Server 2010 workloads—instant messaging (IM) and presence, conferencing, and Enterprise Voice

Поддержка как Hyper-V так и VMware,  заметьте нет ни слова о других платформах (про Xen я гдето видел что подерживаетсят только IM, без голоса и видео)

Windows Server 2008 R2 is required, and both the Hyper-V and VMware virtualization platforms are supported.

Другие роли такие как Edge, Monitoring, Archiving, поддерживаются в виртуализации но должны быть на отдельном виртуальном сервере от Standard Edition

You can also deploy an Edge Server (either physical or virtual), and Monitoring Server or Archiving Server (either physical or virtual). If you deploy either of these roles on a virtual server, that virtual server must be hosted on a physical server that is separate from the server hosting the Standard Edition server
